- 2 pounds baby potatoes or Yukon Gold potatoes, cut into bite-sized pieces
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup grated Parmesan cheese
- 2 tbsp chopped fresh parsley (optional)
Instructions
- Preheat the air fryer to 400°F (200°C).
- Wash and cut the potatoes into bite-sized pieces.
- In a bowl, toss the potatoes with olive oil, garlic powder, salt, and pepper until evenly coated.
- Add grated Parmesan cheese and mix well.
- Place the potatoes in the air fryer basket in a single layer.
- Cook for 15–20 minutes, shaking the basket halfway through, until they are crispy and golden brown.
- Remove from the air fryer, garnish with fresh parsley if desired, and serve warm.
Notes
For make-ahead options, cut and parboil potatoes and store in the fridge, or fully cook them and refrigerate for reheat later. Avoid overcrowding the air fryer for best results.
