- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup fresh apricots, pitted and sliced
- 1/2 cup brown sugar
- 1/2 cup rolled oats
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.
- Mix dry ingredients: In a bowl, combine the flour, baking powder, and salt.
- Cream wet ingredients: In another bowl, cream the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, followed by the vanilla extract.
- Combine mixtures: Gradually mix the dry ingredients into the wet mixture until just combined.
- Pour the batter into the prepared pan and spread it evenly.
- Add sliced apricots on top of the batter.
- Prepare topping: In a small bowl, mix the brown sugar and oats. Sprinkle this mixture over the apricots.
- Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean. Let cool slightly before serving.
Notes
Serve warm with vanilla ice cream or fresh whipped cream. Store leftovers in an airtight container.
