Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup fresh apricots, pitted and sliced
  • 1/2 cup brown sugar
  • 1/2 cup rolled oats

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. Mix dry ingredients: In a bowl, combine the flour, baking powder, and salt.
  3. Cream wet ingredients: In another bowl, cream the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, followed by the vanilla extract.
  4. Combine mixtures: Gradually mix the dry ingredients into the wet mixture until just combined.
  5. Pour the batter into the prepared pan and spread it evenly.
  6. Add sliced apricots on top of the batter.
  7. Prepare topping: In a small bowl, mix the brown sugar and oats. Sprinkle this mixture over the apricots.
  8. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean. Let cool slightly before serving.

Notes

Serve warm with vanilla ice cream or fresh whipped cream. Store leftovers in an airtight container.
