- 2 cups broccoli florets (finely chopped)
- 1 cup breadcrumbs
- 2 eggs
- 2 tbsp all-purpose flour
- 1 1/2 cups shredded cheddar cheese
- 1/3 cup grated Parmesan cheese
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- Cooking spray (for greasing the baking sheet)
Instructions
- Preheat your oven to 400°F (200°C).
- Steam the broccoli florets until they are tender-crisp, about 3-5 minutes. Allow them to cool, then finely chop.
- In a large bowl, mix together the chopped broccoli, breadcrumbs, shredded cheddar cheese, grated Parmesan cheese, eggs, and flour. Season the mixture with garlic powder, onion powder, salt, and pepper. Stir until everything is well combined.
- Roll small portions of the mixture into 1-inch balls and place them on a parchment-lined or greased baking sheet.
- Bake in the preheated oven for 20-25 minutes, or until they are golden brown. For an extra crispy finish, broil for an additional 1-2 minutes, keeping a close eye to prevent burning.
- Allow the broccoli cheese balls to cool slightly before serving them warm with marinara or ranch dip. Enjoy!
Notes
Squeeze excess moisture from broccoli before mixing. Chill the mixture if it’s too loose for rolling. Optionally, use gluten-free ingredients for a gluten-free version.
