The Best Banana Bread Recipe

Ingredients

  • 3 very ripe bananas, peeled and mashed
  • 1/3 cup melted butter
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 3/4 cup granulated sugar (or brown sugar)
  • 1 1/2 cups unbleached all-purpose flour
  • 1/2 teaspoon baking soda (or 1 1/2 teaspoons baking powder)
  • Pinch of salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup chopped walnuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine the mashed bananas and melted butter until smooth.
  3. Add the egg, sugar, and vanilla extract; mix well.
  4. Gradually add the flour, baking soda (or powder), and salt to the banana mixture. Combine until just mixed; do not overmix.
  5. Pour the batter into a greased 8×4 inch loaf pan. Bake for about one hour or until a toothpick inserted in the center comes out clean.
  6. Allow cooling before slicing.

Notes

Use very ripe bananas for the best sweetness and moisture. Don’t overmix the batter to avoid a dense loaf. Check for doneness at 55–65 minutes.
