Cheesy Seafood Tortilla Bombs

A creamy, melty seafood-packed bake that’s quick to assemble and impossible not to share.

Ingredients

  • 1 cup cooked shrimp, chopped
  • 1 cup lump crab meat
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup cheddar cheese, shredded
  • 4 oz cream cheese, softened
  • 1 cup heavy cream
  • 2 Tbsp mayonnaise
  • 2 cloves garlic, minced
  • 2 Tbsp butter
  • 1 tsp paprika
  • Salt, to taste
  • Pepper, to taste
  • 2 Tbsp fresh parsley, chopped
  • 4 flour tortillas

Instructions

  1. In a bowl, combine the chopped cooked shrimp, lump crab meat, softened cream cheese, mayonnaise, minced garlic, paprika, salt, and pepper. Fold in the mozzarella and cheddar until evenly mixed.
  2. Spoon equal portions of the seafood-cheese mixture onto each flour tortilla, roll tightly, and tuck the ends to form sealed “bombs.” Place seam-side down.
  3. In a small saucepan, melt the butter over medium heat, add the remaining minced garlic (if any), then pour in the heavy cream. Simmer 2–3 minutes until slightly thickened; season with salt and pepper.
  4. Arrange the tortilla bombs seam-side down in a shallow baking dish, pour the garlic cream sauce evenly over them, and sprinkle any remaining cheese on top.
  5. Bake at 375°F (190°C) for 12–16 minutes, until golden and bubbly. Garnish with chopped parsley and a pinch of extra paprika before serving.
