- 1 egg, beaten
- 1/3 cup melted butter
- 3/4 cup sugar
- 1 teaspoon vanilla extract
- 3 ripe bananas, mashed
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- pinch of salt
- 1/2 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Stir the melted butter into the mashed bananas.
- Mix in the sugar, egg, and vanilla extract.
- Sprinkle the baking soda and salt over the mixture and mix in.
- Add the flour and stir until just incorporated. Do not overmix. Fold in the chocolate chips.
- Pour the batter into the prepared loaf pan. Bake for 60-65 minutes, or until a toothpick inserted in the center comes out clean.
- Let it cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
Use very ripe bananas for the best sweetness and moisture. Do not overmix after adding flour to keep the crumb tender.
