- 1 cup whole almonds (roasted)
- 2 cups semisweet chocolate chips
- 1 teaspoon coconut oil
- Pinch of sea salt (optional)
Instructions
- Set a heatproof bowl over a pot of gently simmering water (double boiler) and add the chocolate chips. Stir frequently until smooth. Mix in the coconut oil.
- Add the roasted almonds to the melted chocolate and stir until each almond is well coated.
- Using a spoon or cookie scoop, drop small mounds (about 1 tablespoon each) of the chocolate-coated almonds onto a parchment-lined baking sheet.
- Place the baking sheet in the fridge for 20–30 minutes, or until the chocolate is fully set.
- Peel clusters off the parchment and serve immediately. Store extras in an airtight container.
Notes
Use roasted almonds for the best crunch and flavor; lightly toasting raw almonds enhances taste. Work quickly when forming clusters so the chocolate doesn’t start to set in the bowl.
