Chocolate Covered Almond Clusters

Ingredients

  • 1 cup whole almonds (roasted)
  • 2 cups semisweet chocolate chips
  • 1 teaspoon coconut oil
  • Pinch of sea salt (optional)

Instructions

  1. Set a heatproof bowl over a pot of gently simmering water (double boiler) and add the chocolate chips. Stir frequently until smooth. Mix in the coconut oil.
  2. Add the roasted almonds to the melted chocolate and stir until each almond is well coated.
  3. Using a spoon or cookie scoop, drop small mounds (about 1 tablespoon each) of the chocolate-coated almonds onto a parchment-lined baking sheet.
  4. Place the baking sheet in the fridge for 20–30 minutes, or until the chocolate is fully set.
  5. Peel clusters off the parchment and serve immediately. Store extras in an airtight container.

Notes

Use roasted almonds for the best crunch and flavor; lightly toasting raw almonds enhances taste. Work quickly when forming clusters so the chocolate doesn’t start to set in the bowl.
