Cowboy Butter

A bold, garlicky compound butter that instantly amps up steak, seafood, chicken, or crusty bread.

Ingredients

  • 1 cup unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh chives, chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, combine the softened butter, minced garlic, parsley, chives, lemon juice, smoked paprika, salt, and pepper.
  2. Mix until everything is well combined and the texture is creamy and uniform. Taste and adjust salt, pepper, or lemon as needed.
  3. Transfer the butter mixture to a sheet of parchment paper. Roll it into a tight log and twist the ends to seal. Refrigerate until firm, about 60 minutes.
  4. Slice into rounds to top hot steak, chicken, or fish, or serve whole as a spread for bread.
  5. Store wrapped in the fridge for up to 1 week or freeze for longer storage.

Notes

Use softened butter for the best texture and emulsification. Fresh herbs brighten the flavor, and smoked paprika adds depth.
