- 4 boneless, skinless chicken breasts
- 1 cup barbecue sauce
- 1 cup pineapple chunks (fresh or canned, drained)
- 1 tablespoon soy sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt to taste
- Pepper to taste
- Chopped green onions for garnish
Instructions
- Place the chicken breasts in the bottom of the crockpot and season with salt and pepper.
- In a medium bowl, mix together barbecue sauce, pineapple chunks, soy sauce, garlic powder, and onion powder until well combined.
- Pour the mixture over the chicken in the crockpot, ensuring the chicken is well coated.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through and tender.
- Remove the chicken from the crockpot and shred it using two forks.
- Return the shredded chicken to the crockpot and mix it with the sauce.
- Serve hot, garnished with chopped green onions.
Notes
For richer flavor, brown the chicken quickly in a hot skillet before placing it in the crockpot. If the sauce is too thin, remove the lid and cook on high for 15-20 minutes to reduce, or stir in cornstarch mixed with cold water. Adjust seasoning to taste.
