Cucumber Ranch Crack Salad

A creamy and crunchy salad combining cucumbers, ranch dressing, cheddar, and bacon, perfect for summer picnics and potlucks.

Ingredients

  • 4 medium cucumbers, peeled and diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1 cup shredded cheddar cheese (or your favorite cheese, optional)
  • 1/2 cup cooked and crumbled bacon
  • 1 cup ranch dressing
  • 1 tablespoon fresh dill, chopped (optional)
  • Salt to taste
  • Pepper to taste

Instructions

  1. Wash the cucumbers thoroughly, peel if desired, and dice into bite-sized pieces.
  2. In a mixing bowl, combine the diced cucumbers, halved cherry tomatoes, finely chopped red onion, shredded cheddar cheese, and crumbled bacon.
  3. Pour the ranch dressing over the salad mixture and gently toss to coat all ingredients evenly.
  4. Season with salt and pepper to taste. If using, add fresh dill and mix again.
  5. Transfer the salad to a serving dish and enjoy immediately, or refrigerate for about 30 minutes to let flavors meld together.

Notes

For extra tang, stir in 1 tsp apple cider vinegar to the dressing. Make ahead by mixing all ingredients except the dressing for optimal freshness.
