A delicious treat that satisfies your sweet tooth without the guilt, combining tart raspberries with a buttery crumble for an indulgent dessert.

  • Total Time: 45 minutes
  • Yield: 16 servings 1x

Ingredients

Scale
  • 2 cups Gluten-Free All-Purpose Flour
  • 1 cup Cane Sugar
  • 1/2 teaspoon Salt
  • 1/2 cup Dairy-Free Butter
  • 1/2 cup Brown Sugar
  • 1/2 cup Pecans
  • 1 cup Rolled Oats
  • 1 cup Raspberry Preserves
  • 1 cup Fresh Raspberries
  • 2 tablespoons Fresh Lemon Juice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. In a large bowl, mix together the gluten-free flour, cane sugar, brown sugar, salt, butter, and pecans until crumbly.
  3. Reserve about 1 cup of the crumble mixture and press the rest into the bottom of the prepared baking dish.
  4. Spread raspberry preserves evenly over the crust, then sprinkle fresh raspberries on top.
  5. Crumble the reserved dough over the raspberries, ensuring an even layer.
  6. Bake for 25-30 minutes, until golden brown. Allow to cool before cutting into bars.

Notes

Use cold butter for a crumbly texture. Allow bars to cool completely before slicing for better shape. They can be frozen for up to 3 months.
