- 1 sheet puff pastry (thawed if frozen)

- 1 cup apricot preserves
- 1 egg (for egg wash)
- Powdered sugar (for dusting)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out the puff pastry on a floured surface and cut it into 4–6 even squares.
- Place a spoonful of apricot preserves in the center of each square.
- Fold the corners of the pastry over the filling to create an envelope shape and press the edges to seal.
- Brush the tops with beaten egg for a golden finish.
- Bake for 15-20 minutes or until the pastry is puffed and golden brown.
- Dust with powdered sugar before serving.
Notes
Keep pastry cold until ready to bake for maximum flakiness. Use a generous spoonful of preserves but avoid overfilling to prevent leaks.
