- 8 oz pasta (such as rotini or penne)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup bell pepper, diced
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
- Optional: fresh herbs (like parsley or basil)
Instructions
- Cook the pasta according to package instructions; drain and let cool.
- Combine the cooled pasta, cherry tomatoes, cucumber, bell pepper, and cheese in a large bowl.
- Make the dressing by mixing together mayonnaise, sour cream, Dijon mustard, salt, and pepper.
- Pour the dressing over the pasta and vegetable mixture, and toss to combine.
- Add fresh herbs if desired.
- Chill in the refrigerator for at least 30 minutes before serving. Enjoy!
Notes
Rinse pasta under cold water after draining for quick cooling. Adjust dressing seasonings to taste.
