Easy Summer Salad

A simple, refreshing mix of diced cucumbers, tomatoes, and sweet onions dressed with olive oil and vinegar.

Ingredients

  • 2 medium Cucumbers, peeled if waxed
  • 1 small Sweet onion (Vidalia or Walla Walla)
  • 3 medium Tomatoes (ripe Roma or vine tomatoes)
  • 3 tablespoons Olive oil (extra-virgin recommended)
  • 1.5 tablespoons Vinegar (red wine vinegar recommended)
  • Salt, to taste (about 1/2 teaspoon)
  • Pepper, to taste (about 1/4 teaspoon)

Instructions

  1. Wash the cucumbers, tomatoes, and sweet onions thoroughly under cold running water.
  2. Dice the cucumbers into roughly half-inch cubes.
  3. Dice the tomatoes into similar-sized pieces.
  4. Dice the sweet onions finely.
  5. Combine the diced vegetables in a medium mixing bowl.
  6. Drizzle the olive oil and vinegar over the vegetables.
  7. Season with salt and pepper to taste.
  8. Toss everything together gently until well mixed.
  9. Serve the salad chilled or at room temperature.

Notes

Choose firm cucumbers and ripe tomatoes for best results. Store dressing separately if making ahead.
