- 2 medium Cucumbers, peeled if waxed
- 1 small Sweet onion (Vidalia or Walla Walla)
- 3 medium Tomatoes (ripe Roma or vine tomatoes)
- 3 tablespoons Olive oil (extra-virgin recommended)
- 1.5 tablespoons Vinegar (red wine vinegar recommended)
- Salt, to taste (about 1/2 teaspoon)
- Pepper, to taste (about 1/4 teaspoon)
Instructions
- Wash the cucumbers, tomatoes, and sweet onions thoroughly under cold running water.
- Dice the cucumbers into roughly half-inch cubes.
- Dice the tomatoes into similar-sized pieces.
- Dice the sweet onions finely.
- Combine the diced vegetables in a medium mixing bowl.
- Drizzle the olive oil and vinegar over the vegetables.
- Season with salt and pepper to taste.
- Toss everything together gently until well mixed.
- Serve the salad chilled or at room temperature.
Notes
Choose firm cucumbers and ripe tomatoes for best results. Store dressing separately if making ahead.
