- 2 cups mashed potatoes (cooled, plain or seasoned)
- 2 cups all-purpose flour
- 1/4 cup water (if needed)
- 1/2 cup shredded cheese (cheddar or mozzarella) – optional
- 2 tablespoons everything bagel seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Olive oil for cooking
Instructions
- In a large bowl, combine mashed potatoes, flour, everything bagel seasoning, salt, and pepper until a dough forms.
- If the mixture seems too dry, add water gradually—1 tablespoon at a time—until it holds together.
- Stir in shredded cheese now if using, then divide the dough into smaller portions (6–8 pieces).
- Roll each portion into a flat circle about 1/4 inch thick on a lightly floured surface.
- Heat a thin layer of olive oil in a skillet over medium heat.
- Cook each flatbread for about 3–4 minutes on each side or until golden brown and cooked through.
- Transfer to a rack briefly to keep crisp and serve warm as a snack or appetizer. Enjoy!
Notes
Use cooled mashed potatoes so the dough doesn’t get too sticky. Store leftovers in an airtight container up to 3 days.
