Ingredients
Scale
- 900 g lean steak, trimmed and cut into 1-inch cubes
- 1 tablespoon olive oil (for marinade)
- 2 tablespoons soy sauce (for marinade)
- 2 tablespoons balsamic vinegar (for marinade)
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ tablespoon garlic powder
- ¼ teaspoon crushed red pepper flakes (optional)
- 3 garlic cloves, minced (for sauce)
- 2 tablespoons balsamic vinegar (for sauce)
- 2 tablespoons low-sodium beef broth
- 1 teaspoon honey
- 1 tablespoon soy sauce (for sauce)
- 680 g baby gold potatoes, quartered
- ½ tablespoon olive oil (for potatoes)
- ½ teaspoon salt (for potatoes)
- ½ teaspoon black pepper (for potatoes)
- ½ tablespoon garlic powder (for potatoes)
- 1 teaspoon paprika
- 340 g fresh green beans, trimmed
- ½ tablespoon olive oil (for green beans)
- ½ teaspoon salt (for green beans)
- ½ teaspoon black pepper (for green beans)
- ½ tablespoon garlic powder (for green beans)
Instructions
- In a bowl, combine olive oil, soy sauce, balsamic vinegar, salt, black pepper, garlic powder, and red pepper flakes. Add the steak cubes and toss to coat. Cover and refrigerate for at least 30 minutes, up to 4 hours.
- Preheat oven to 220°C (428°F). Toss quartered potatoes with olive oil, salt, black pepper, garlic powder, and paprika. Spread on a large baking sheet and roast for 20-25 minutes, flipping once.
- Toss green beans with olive oil, salt, black pepper, and garlic powder. Spread on a second baking sheet and roast during the last 12-15 minutes of the potatoes’ cooking time.
- Heat a large skillet over medium-high heat. Sear marinated steak in batches for 2-3 minutes per side until browned. Transfer to a plate.
- In the same skillet, add minced garlic and sauté for 30 seconds. Stir in balsamic vinegar, beef broth, honey, and soy sauce. Simmer for 2 minutes until thickened. Return steak to the pan and toss to coat in glaze.
- Divide roasted potatoes and green beans onto plates or containers. Top with steak bites and spoon extra glaze over everything.
Notes
Marinate the steak up to 4 hours or overnight for deeper flavor. Store roasted potatoes and green beans separately in the fridge for best texture.
