- 2 chicken breasts, diced
- 1 pound gnocchi (store-bought)
- 3 tablespoons olive oil
- 1 cup heavy cream
- 4 cloves garlic, minced
- 1 cup spinach
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add the diced chicken and cook until browned and cooked through.
- Stir in the minced garlic and cook until fragrant.
- Add the gnocchi and heavy cream, stirring to combine.
- Bring to a simmer and cook until gnocchi is tender, about 5-7 minutes.
- Stir in spinach and Parmesan cheese, and season with salt and pepper.
- Cook until spinach is wilted and cheese is melted.
- Garnish with fresh parsley before serving.
Notes
Pat chicken dry before dicing to encourage good browning. Use store-bought gnocchi for speed.
