Garlic Chicken Gnocchi Skillet

Ingredients

  • 2 chicken breasts, diced
  • 1 pound gnocchi (store-bought)
  • 3 tablespoons olive oil
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1 cup spinach
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add the diced chicken and cook until browned and cooked through.
  3. Stir in the minced garlic and cook until fragrant.
  4. Add the gnocchi and heavy cream, stirring to combine.
  5. Bring to a simmer and cook until gnocchi is tender, about 5-7 minutes.
  6. Stir in spinach and Parmesan cheese, and season with salt and pepper.
  7. Cook until spinach is wilted and cheese is melted.
  8. Garnish with fresh parsley before serving.

Notes

Pat chicken dry before dicing to encourage good browning. Use store-bought gnocchi for speed.
