  • 1 teaspoon Salt

  • 1 Large Egg (beaten)
  • 1/41/2 cup Cold Water (adjust based on desired consistency)
  • 2 cups Cooked, Shredded Chicken (or any preferred filling)
  • 1 cup Cheese (cheddar, mozzarella, or favorite)
  • 1 cup Finely Chopped Onions
  • 1 cup Diced Bell Pepper
  • 1 teaspoon Cumin (optional)
  • 1 Large Egg (for egg wash)
  • Oil for frying (if desired)

Instructions

  1. Prepare the Dough: In a mixing bowl, combine the gluten-free flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the beaten egg and add cold water gradually until a dough forms. Wrap in plastic wrap and chill for at least 30 minutes.
  2. Make the Filling: In a skillet over medium heat, sauté the onions and bell pepper until soft. Add the cooked chicken, cheese, and cumin (if using). Mix to combine and remove from heat.
  3. Roll Out the Dough: On a lightly floured surface, roll out the dough to about 1/8-inch thickness. Cut into circles (about 4-5 inches in diameter).
  4. Fill the Empanadas: Place a spoonful of the filling on one half of each circle. Fold over to create a half-moon shape and press the edges to seal. Use a fork to crimp the edges for a decorative finish.
  5. Cook the Empanadas: Preheat your oven to 375°F (190°C) and place empanadas on a baking sheet; brush with egg wash and bake for 20-25 minutes, or until golden brown. Alternatively, heat oil in a skillet and fry empanadas until golden brown on both sides.
  6. Serve and Enjoy: Serve warm with your favorite dipping sauce!
