- 1 Large Egg (beaten)
- 1/4–1/2 cup Cold Water (adjust based on desired consistency)
- 2 cups Cooked, Shredded Chicken (or any preferred filling)
- 1 cup Cheese (cheddar, mozzarella, or favorite)
- 1 cup Finely Chopped Onions
- 1 cup Diced Bell Pepper
- 1 teaspoon Cumin (optional)
- 1 Large Egg (for egg wash)
- Oil for frying (if desired)
Instructions
- Prepare the Dough: In a mixing bowl, combine the gluten-free flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the beaten egg and add cold water gradually until a dough forms. Wrap in plastic wrap and chill for at least 30 minutes.
- Make the Filling: In a skillet over medium heat, sauté the onions and bell pepper until soft. Add the cooked chicken, cheese, and cumin (if using). Mix to combine and remove from heat.
- Roll Out the Dough: On a lightly floured surface, roll out the dough to about 1/8-inch thickness. Cut into circles (about 4-5 inches in diameter).
- Fill the Empanadas: Place a spoonful of the filling on one half of each circle. Fold over to create a half-moon shape and press the edges to seal. Use a fork to crimp the edges for a decorative finish.
- Cook the Empanadas: Preheat your oven to 375°F (190°C) and place empanadas on a baking sheet; brush with egg wash and bake for 20-25 minutes, or until golden brown. Alternatively, heat oil in a skillet and fry empanadas until golden brown on both sides.
- Serve and Enjoy: Serve warm with your favorite dipping sauce!
