- ¼ cup Freshly Squeezed Orange Juice
- 1 tsp Vanilla Extract
- Orange Zest (more for stronger flavor)
- 1¼ cups Gluten-Free Flour (Bob’s Red Mill 1 to 1 recommended)
- ½ cup Almond Flour (or oat flour for nut-free option)
- 1 tsp Ground Cardamom (to taste)
- 1 cup Powdered Sugar (for glaze)
- 2 tbsp Fresh Orange Juice (for glaze)
- ½ tsp Vanilla Extract (for glaze)
- 1 tsp Ground Cardamom (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, whisk together the eggs, sugar, yogurt, coconut oil, orange juice, vanilla extract, and orange zest until smooth.
- In another bowl, combine the gluten-free flour, almond flour, and ground cardamom.
- Gradually add the dry ingredients to the wet mixture and stir until just combined.
- Transfer the batter into the prepared loaf pan, smoothing the top.
- Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack.
- For the glaze, mix powdered sugar, fresh orange juice, vanilla extract, and ground cardamom. Drizzle over the cooled bread.
Notes
Store in an airtight container for up to 4 days. Freezing slices is possible for up to 3 months.
