  • ½ cup Yogurt (Non-dairy yogurt for a dairy-free version)
  • ¼ cup Refined Coconut Oil (Melted vegan butter as an alternative)
  • ¼ cup Freshly Squeezed Orange Juice
  • 1 tsp Vanilla Extract
  • Orange Zest (more for stronger flavor)
  • 1¼ cups Gluten-Free Flour (Bob’s Red Mill 1 to 1 recommended)
  • ½ cup Almond Flour (or oat flour for nut-free option)
  • 1 tsp Ground Cardamom (to taste)
  • 1 cup Powdered Sugar (for glaze)
  • 2 tbsp Fresh Orange Juice (for glaze)
  • ½ tsp Vanilla Extract (for glaze)
  • 1 tsp Ground Cardamom (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together the eggs, sugar, yogurt, coconut oil, orange juice, vanilla extract, and orange zest until smooth.
  3. In another bowl, combine the gluten-free flour, almond flour, and ground cardamom.
  4. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  5. Transfer the batter into the prepared loaf pan, smoothing the top.
  6. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack.
  8. For the glaze, mix powdered sugar, fresh orange juice, vanilla extract, and ground cardamom. Drizzle over the cooled bread.

Notes

Store in an airtight container for up to 4 days. Freezing slices is possible for up to 3 months.
