- 1 lb Boneless Skinless Chicken Thighs (or chicken breasts)
- 1/4 cup Maple Syrup
- 2 tbsp Sriracha Sauce (adjust to suit spice tolerance)
- 2 tbsp Soy Sauce
- 2 cloves Garlic (minced)
- 2 tbsp Olive Oil
- to taste Salt and Black Pepper
- 1 cup Jasmine Rice
- 1 can Coconut Milk
- 1 cup Water
- 1 medium Ripe Mango
- 1 medium Avocado
- 1/4 cup Red Onion
- 1/2 cup Cherry Tomatoes
- 1/4 cup Fresh Cilantro
- 1 tbsp Lime Juice
- 1/2 cup Mayonnaise
- 1 tbsp Sriracha Sauce
- 1 tbsp Lime Juice
Instructions
- In a bowl, combine maple syrup, Sriracha, soy sauce, minced garlic, olive oil, salt, and pepper. Add chicken and marinate for at least 15 minutes.
- In a saucepan, combine jasmine rice, coconut milk, and water. Bring to a boil, then cover and simmer for 15 minutes until cooked.
- Preheat the grill to medium-high. Thread marinated chicken onto skewers. Grill for about 4-5 minutes per side or until cooked through.
- Dice mango, avocado, red onion, and cherry tomatoes. Mix with cilantro and lime juice in a bowl.
- In a separate bowl, mix mayonnaise, Sriracha, and lime juice. Adjust seasoning as necessary.
- Once the chicken is cooked, serve it over rice topped with mango salsa and a drizzle of the Sriracha mayo.
Notes
For marination, chicken can be prepared overnight in the fridge for deeper flavor. Store leftover rice and salsa separately in airtight containers.
