Hobo Casserole Ground Beef

A warm, cheesy one-dish meal combining seasoned ground beef and tender potatoes.

Ingredients

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 45 medium potatoes, thinly sliced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup beef broth or water
  • 1/4 cup milk (optional, for creaminess)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned (about 5–7 minutes). Drain excess fat if needed.
  3. Add the chopped onion and minced garlic to the skillet and cook until the onion is soft (3-4 minutes).
  4. Layer the sliced potatoes on top of the cooked beef in the prepared baking dish, seasoning with salt, pepper, Italian seasoning, and paprika.
  5. Sprinkle the cheddar and Parmesan cheese on top. Pour the beef broth (or water) around the edges and optionally drizzle with milk.
  6. Cover with foil and bake for 30 minutes. Then remove the foil and bake for another 15-20 minutes until the potatoes are tender and cheese is bubbly.
  7. Garnish with fresh parsley and serve hot.

Notes

Slice potatoes evenly for even cooking. Consider using sharp cheddar for more flavor.
