Honeycrisp Apple and Feta Salad

A bright and crunchy salad featuring Honeycrisp apples, tangy feta, and a honey-Dijon dressing, perfect for lunch or as a side dish.

Ingredients

  • 4 cups mixed greens
  • 2 large Honeycrisp apples, thinly sliced
  • 1/4 cup thinly sliced red onion
  • 1/2 cup crumbled feta cheese
  • 1/3 cup dried cranberries
  • 1/3 cup candied walnuts
  • 3 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Wash and dry mixed greens if not pre-washed. Thinly slice the Honeycrisp apples and red onion.
  2. In a small bowl or jar, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper. Adjust to taste.
  3. In a large bowl, combine the mixed greens, sliced Honeycrisp apples, crumbled feta, dried cranberries, red onion, and candied walnuts.
  4. Add the dressing just before serving and toss gently to coat evenly.
  5. Taste and add extra salt, pepper, or a squeeze of lemon juice if desired.

Notes

Use Honeycrisp apples for the best crunch and sweetness, and toss the dressing just before serving to keep greens crisp.
