- 1 pound chicken breast, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon fresh ginger, minced
- 2 tablespoons chili paste
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, thinly sliced
- 3 cloves garlic, minced
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- In a large bowl, combine chicken, soy sauce, ginger, and chili paste. Marinate for 15 minutes.
- Heat vegetable oil in a large skillet over medium-high heat.
- Add the marinated chicken and stir-fry until cooked through, about 5-7 minutes.
- Add garlic, bell pepper, broccoli, and carrot to the skillet. Stir-fry for another 5 minutes until veggies are tender-crisp.
- Season with salt and pepper to taste.
- Serve hot over rice or noodles.
Notes
You can marinate the chicken up to a day in advance. Hunan Chicken Stir Fry can be stored in the fridge for up to 3 days and frozen for up to 3 months.
