Hunan Chicken Stir Fry

Ingredients

  • 1 pound chicken breast, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons chili paste
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, thinly sliced
  • 3 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine chicken, soy sauce, ginger, and chili paste. Marinate for 15 minutes.
  2. Heat vegetable oil in a large skillet over medium-high heat.
  3. Add the marinated chicken and stir-fry until cooked through, about 5-7 minutes.
  4. Add garlic, bell pepper, broccoli, and carrot to the skillet. Stir-fry for another 5 minutes until veggies are tender-crisp.
  5. Season with salt and pepper to taste.
  6. Serve hot over rice or noodles.

Notes

You can marinate the chicken up to a day in advance. Hunan Chicken Stir Fry can be stored in the fridge for up to 3 days and frozen for up to 3 months.
