Irish Potato Farls

A rustic skillet-cooked potato bread made from leftover mashed potatoes, perfect for breakfast or brunch.

Ingredients

  • 2 cups mashed potatoes (cooled, plain or seasoned)
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons butter (plus more for cooking)
  • 1 egg (optional, for binding)

Instructions

  1. Combine mashed potatoes, flour, baking powder, and salt in a mixing bowl.
  2. Add the egg if using for better binding.
  3. Knead gently until a soft dough forms.
  4. Divide the dough into four parts and shape each into a flat round about 1/2-inch thick.
  5. Heat a skillet over medium heat and melt butter.
  6. Cook each farl for about 4–5 minutes on each side until golden brown.
  7. Keep finished farls warm on a plate covered with a towel.
  8. Serve warm with eggs, bacon, or butter.

Notes

Use cooled mashed potatoes for best results. Adjust flour carefully to avoid a sticky dough. Reheat in a skillet for crispiness.
