Juicy Pineapple Heaven Cake

Ingredients

  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup white sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1 cup crushed pineapple, well-drained
  • 1/2 cup icing sugar
  • 2 tbsp pineapple juice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, and stir in vanilla extract and sour cream.
  5. Gradually add the dry ingredients to the wet mixture, mixing gently.
  6. Fold in the drained crushed pineapple gently into the batter.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 30-35 minutes or until a toothpick comes out clean.
  9. While the cake bakes, whisk together icing sugar and pineapple juice until smooth for the glaze.
  10. Allow the cake to cool completely before glazing with the pineapple glaze.

Notes

For best results, drain the pineapple well to avoid a wet batter. Room temperature eggs and butter help in achieving a lighter crumb.
