- 1 and 1/2 cups all-purpose flour

- 1 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup white sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1 cup crushed pineapple, well-drained
- 1/2 cup icing sugar
- 2 tbsp pineapple juice
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round cake pan.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Beat in the eggs one at a time, and stir in vanilla extract and sour cream.
- Gradually add the dry ingredients to the wet mixture, mixing gently.
- Fold in the drained crushed pineapple gently into the batter.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- While the cake bakes, whisk together icing sugar and pineapple juice until smooth for the glaze.
- Allow the cake to cool completely before glazing with the pineapple glaze.
Notes
For best results, drain the pineapple well to avoid a wet batter. Room temperature eggs and butter help in achieving a lighter crumb.
