Ingredients

  • 1 cup graham cracker crumbs
  • 4 tablespoons melted unsalted butter
  • 8 oz full-fat cream cheese, softened
  • ½ cup powdered sugar
  • ½ cup freshly squeezed key lime juice
  • 1 tablespoon key lime zest
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream, chilled
  • Extra graham cracker crumbs for topping
  • Additional lime zest for garnish

Instructions

  1. Mix the graham cracker crumbs with melted butter and press into the bottom of a trifle dish.
  2. In a chilled bowl, whip the heavy cream until stiff peaks form.
  3. In another bowl, beat the softened cream cheese until smooth. Gradually add powdered sugar, lime juice, zest, and vanilla.
  4. Gently fold the whipped cream into the lime mixture.
  5. Layer half the lime mixture over the crust, sprinkle with more crumbs, then repeat. Top with extra crumbs and zest.
  6. Chill in the fridge for at least 120 minutes before serving.

Notes

Make ahead: assemble the trifle a day before and top with fresh zest for best texture.
