- 2 cups grilled chicken, chopped
- 8 ounces pasta (penne, rotini, or farfalle), cooked
- 1–2 cups tomatoes, chopped
- 1 cup mozzarella cheese, cubed
- 1/2 cup fresh basil leaves, torn
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 tsp salt (to taste)
- 1/2 tsp black pepper (to taste)
Instructions
- Cook the pasta according to package instructions; drain and set aside.
- Combine grilled chicken, chopped tomatoes, mozzarella cubes, and fresh basil in a large bowl.
- Add cooked pasta to the bowl and gently toss all ingredients together.
- Drizzle olive oil and balsamic vinegar over the pasta salad.
- Season with salt and pepper to taste, then serve immediately or chill in the refrigerator.
Notes
For best flavor, make ahead and chill for at least 30 minutes. Serve over mixed greens for extra veggies.
