Lemon Brownies

Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • Zest of 2 lemons
  • 1/2 cup fresh lemon juice
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons lemon juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, mix melted butter and sugar until combined.
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. Add flour, salt, lemon zest, and lemon juice. Mix until just combined.
  5. Pour the batter into the prepared baking dish and spread evenly.
  6. Bake for 25-30 minutes, or until a toothpick comes out clean.
  7. Allow to cool completely in the pan.
  8. To make the glaze, mix powdered sugar with lemon juice until smooth.
  9. Drizzle the glaze over the cooled brownies.
  10. Cut into squares and serve.

Notes

Zest before juicing the lemons for maximum flavor. Cool completely before glazing to set the sugar glaze.
