Instructions

  1. Preheat the grill to medium-high heat so it reaches a good searing temperature.
  2. Trim the tough ends off the asparagus by snapping or cutting about 1–2 inches from the bottom.
  3. Make the marinade by combining 2 tablespoons olive oil, the lemon juice, lemon zest, salt, and pepper; whisk briefly until well blended.
  4. Coat the asparagus in the marinade until each spear is evenly coated.
  5. Grill asparagus for about 5–7 minutes, turning occasionally, until tender and slightly charred.
  6. Finish by removing from grill, sprinkling with crumbled feta cheese, and serve immediately.

Notes

Use uniform-thickness spears for even cooking. Don’t over-marinate; a few minutes is enough.
