Lime Chicken Party

A bright and simple weeknight grill recipe featuring zesty lime-marinated chicken, topped with avocado and cilantro.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 limes, juiced
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a bowl, mix olive oil, lime juice, chili powder, salt, and pepper.
  2. Marinate the chicken breasts in the mixture for at least 30 minutes.
  3. Preheat grill to medium heat (about 375–400°F).
  4. Grill the chicken over medium heat for about 6–7 minutes on each side or until cooked through.
  5. Let the chicken rest for 5 minutes before slicing to keep it juicy.
  6. Serve topped with diced avocado and chopped cilantro. Enjoy!

Notes

Pound thicker chicken breasts to an even thickness for uniform cooking. Use freshly squeezed lime juice for the best flavor.
