- 5–6 cups mixed berries (fresh or thawed frozen)

- 1½ teaspoons baking powder
- ¼ teaspoon salt
- ½ cup unsalted butter (cold and cubed)
- ¾ cup heavy cream
- 1 tablespoon coarse sugar (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Toss the mixed berries with 3/4 cup granulated sugar, lemon juice, cornstarch, and vanilla. Spread the fruit mixture evenly in a 9×13-inch or similar baking dish.
- In a separate bowl, whisk together flour, 2 tablespoons sugar, baking powder, and salt. Cut in the cold cubed butter until the mixture resembles coarse crumbs.
- Stir in cold heavy cream until just combined — do not overmix.
- Drop spoonfuls of biscuit dough over the berry mixture, leaving small gaps for steam to escape. Sprinkle biscuits with coarse sugar if desired.
- Bake for about 30–35 minutes, or until the biscuits are golden and the berries are bubbling. Allow the cobbler to rest for 15 minutes before serving.
Notes
Use a mix of berries for depth of flavor. Let the cobbler rest after baking for a thicker filling.
