- 2 cups rhubarb, chopped
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup granulated sugar (split)
- 1 cup milk
- 1/2 cup unsalted butter, melted
- 1 tablespoon vanilla extract
- Whipped cream or vanilla ice cream for serving (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the rhubarb with 1/2 cup of sugar in a mixing bowl and set aside.
- Mix together the flour, baking powder, salt, remaining sugar, milk, melted butter, and vanilla extract until smooth in another bowl.
- Pour the batter into a greased baking dish and distribute the rhubarb over the top.
- Bake for 30-35 minutes or until golden brown and a toothpick inserted in the center comes out clean.
- Let cool slightly before serving. Enjoy!
Notes
Chop rhubarb into uniform pieces for even cooking. Use full-fat milk for a richer texture.
