Moist Rhubarb Cobbler

Ingredients

  • 2 cups rhubarb, chopped
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar (split)
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon vanilla extract
  • Whipped cream or vanilla ice cream for serving (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the rhubarb with 1/2 cup of sugar in a mixing bowl and set aside.
  3. Mix together the flour, baking powder, salt, remaining sugar, milk, melted butter, and vanilla extract until smooth in another bowl.
  4. Pour the batter into a greased baking dish and distribute the rhubarb over the top.
  5. Bake for 30-35 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  6. Let cool slightly before serving. Enjoy!

Notes

Chop rhubarb into uniform pieces for even cooking. Use full-fat milk for a richer texture.
