Ingredients

  • 1 cup peanut butter (smooth or crunchy)
  • 1 cup old-fashioned oats
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter

Instructions

  1. Melt the butter in a saucepan over low heat until just liquefied.
  2. Stir in the sugar and peanut butter, mixing until smooth and combined.
  3. Remove from heat to cool slightly so the mixture thickens a little.
  4. Stir in the oats until well coated and evenly mixed.
  5. Drop spoonfuls of the mixture onto a parchment-lined tray, leaving space between each.
  6. Let sit at room temperature until firm, about 20–30 minutes before enjoying.

Notes

For firmer cookies, let them chill briefly in the fridge after setting at room temperature. Store in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
