Quick Sesame Marinated Asparagus

A bright and flavorful side dish featuring crisp-tender asparagus marinated with rice vinegar and sesame oil.

Ingredients

  • 1 bunch fresh asparagus (1 to pounds)
  • 2 Tablespoons rice vinegar
  • ¼ teaspoon sesame oil
  • 1 teaspoon toasted sesame seeds
  • Pinch of kosher salt (optional)
  • Freshly ground black pepper, to taste

Instructions

  1. Wash the asparagus and discard the tough woody ends of the stalks by bending each until the woody end breaks off.
  2. In a large pan, add about an inch of water and bring to a boil. Add the asparagus and cook for a few minutes until tender and bright green, being careful not to overcook it.
  3. Transfer the blanched asparagus to a bowl of ice water to stop the cooking process. Remove once completely cool and pat dry.
  4. Arrange the asparagus on a serving dish. Toss with the rice vinegar and sesame oil. Let marinate for at least 15 minutes.
  5. Top with sesame seeds before serving.

Notes

For added flavor, toast the sesame seeds before using. Marinate up to 24 hours for deeper flavor development.
