Rhubarb Cream Cheese Bars

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups rhubarb, chopped
  • 1/2 cup granulated sugar (for rhubarb)
  • 1 tbsp cornstarch
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. Mix together the flour and powdered sugar, then cut in the butter until crumbly. Press the mixture into the bottom of the prepared pan.
  3. Bake for 15 minutes until lightly golden.
  4. Beat together the cream cheese and sugar until smooth. Add in the eggs and vanilla extract, mixing until well combined.
  5. Spread the cream cheese mixture over the baked crust.
  6. Combine rhubarb, sugar, cornstarch, and salt in another bowl. Spoon the rhubarb mixture over the cream cheese layer.
  7. Bake for an additional 25-30 minutes, or until the rhubarb is tender and the filling is set.
