Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 cup rhubarb, chopped
  • 1/2 cup brown sugar
  • 1 tablespoon cornstarch
  • 2 eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a square baking dish.
  2. Mix the flour, butter, granulated sugar, and salt until the mixture is crumbly.
  3. Press this crumbly mixture evenly into the bottom of the prepared baking dish to form the crust.
  4. Combine the chopped rhubarb, brown sugar, and cornstarch in another bowl; stir well and spread evenly over the crust.
  5. Whisk together the eggs and vanilla extract until frothy, then pour this mixture over the rhubarb layer.
  6. Bake for 30–35 minutes, or until the edges are golden and the center is set. Let cool completely before cutting into bars and serving.

Notes

For variations, try adding strawberries, using oats for the crust, or incorporating almond extract in the custard.
