Soft Dried Apricot Cookies

Ingredients

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon cinnamon
  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup dried apricots, chopped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix together the flour, baking soda, salt, and cinnamon in a bowl.
  3. Cream the butter, brown sugar, and granulated sugar until fluffy in another mixing bowl.
  4. Add the egg and vanilla extract, mixing well until combined.
  5. Combine the dry ingredients with the wet mixture and stir until combined, then fold in the chopped dried apricots.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper and bake for 10-12 minutes or until edges are golden.
  7. Let cool on a wire rack before serving.

Notes

For a chewy texture, be careful not to overbake. Store in an airtight container at room temperature for up to 4 days.
