Ingredients

- 1 1/2 lbs shrimp, peeled and deveined
- 3–4 tbsp Calabrian chili paste
- 10 cloves garlic, minced
- 6 tbsp butter, salted
- 2 tbsp olive oil, extra virgin (plus 1 tbsp for initial sear)
- 1/2 cup cilantro, finely chopped
- Salt, to taste
Instructions
- Pat shrimp dry and season lightly with salt. Heat 1 tbsp olive oil in a large skillet over medium-high heat.
- Sear shrimp in a single layer for 1–2 minutes per side until pink; remove and set aside.
- Reduce heat to medium, add remaining olive oil and 6 tbsp butter. Stir in garlic and cook 30–45 seconds until fragrant.
- Stir in Calabrian chili paste and cook for 1 minute.
- Return shrimp to skillet, toss to coat in the sauce, and cook for 1–2 more minutes until heated through.
- Remove from heat, stir in cilantro, adjust salt, and serve immediately.
Notes
For best texture, use large shrimp and ensure they are very dry before searing.
