Strawberry Crumb Bars

Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, chopped
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. Combine flour, sugar, salt, and baking powder in a bowl. Add softened butter and vanilla, mixing until crumbly.
  3. Press half of the mixture into the bottom of the prepared baking dish to form the crust.
  4. Mix strawberries, lemon juice, cornstarch, and cinnamon in another bowl. Spread the strawberry mixture over the crust.
  5. Crumble the remaining pastry mixture over the top of the strawberries.
  6. Bake for 30-35 minutes or until golden brown.
  7. Allow to cool before cutting into bars and serving, preferably warm with vanilla ice cream.

Notes

Use ripe strawberries and chill dough briefly in warm kitchens for best results.
