Strawberry Earthquake Cake

Ingredients

  • 1 chocolate cake mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 (8 oz) package cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup fresh strawberries, chopped
  • 1 cup shredded coconut
  • 1 cup chopped nuts (optional)
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, combine the chocolate cake mix, water, vegetable oil, and eggs. Beat until well blended.
  3. In another bowl, mix the softened cream cheese and powdered sugar until smooth.
  4. Pour half of the cake batter into the prepared baking dish.
  5. Drop spoonfuls of the cream cheese mixture over the batter, then sprinkle the strawberries, coconut, nuts, and chocolate chips on top.
  6. Pour the remaining cake batter over the top, ensuring all the filling is covered.
  7. Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cool before serving.

Notes

Serve warm with vanilla ice cream or chilled topped with whipped cream and extra strawberries. Experiment with nut swaps for different textures.
