Thai Coconut Custard

Ingredients

  • 1/2 cup rice flour
  • 1/4 cup tapioca flour
  • 3/4 cup pandan juice
  • 3/4 cup palm sugar/brown sugar
  • 1/4 teaspoon salt
  • 1/2 cup coconut cream
  • 2 tablespoons rice flour
  • 1/4 teaspoon salt

Instructions

  1. In a bowl, mix 1/2 cup rice flour, 1/4 cup tapioca flour, 3/4 cup palm sugar, and 1/4 teaspoon salt.
  2. Gradually stir in the 3/4 cup pandan juice until smooth.
  3. Pour the mixture into a greased dish and steam for about 20-25 minutes until set.
  4. Meanwhile, mix 1/2 cup coconut cream, 2 tablespoons rice flour, and 1/4 teaspoon salt in a bowl.
  5. Pour the coconut mixture over the steamed base and steam for an additional 10-15 minutes until fully cooked.
  6. Let the custard cool slightly before slicing. Serve warm or chilled.

Notes

This custard keeps well in the fridge for up to 3 days and can be frozen for up to a month.
