Yogurt Mediterranean Chicken Wraps

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup plain yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 4 large tortillas or flatbreads

Instructions

  1. In a bowl, combine the shredded chicken, yogurt, lemon juice, oregano, salt, and pepper. Mix until smooth.
  2. Fold in cucumber, cherry tomatoes, red onion, olives, and feta until evenly distributed. Taste and adjust seasoning.
  3. Lay out a tortilla or flatbread and spoon about 1/4 of the chicken mixture into the center.
  4. Fold in the sides of the tortilla and roll it up tightly, tucking the ends as you go. Repeat with remaining tortillas and filling.
  5. Cut each wrap in half and serve immediately, or wrap in foil for a packed lunch.

Notes

Prep the chicken-yogurt filling up to 3 days in advance. Keep tortillas separate for best texture.
