- 2 cups cooked chicken, shredded
- 1 cup plain yogurt
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/4 cup Kalamata olives, sliced
- 1/4 cup feta cheese, crumbled
- 4 large tortillas or flatbreads
Instructions
- In a bowl, combine the shredded chicken, yogurt, lemon juice, oregano, salt, and pepper. Mix until smooth.
- Fold in cucumber, cherry tomatoes, red onion, olives, and feta until evenly distributed. Taste and adjust seasoning.
- Lay out a tortilla or flatbread and spoon about 1/4 of the chicken mixture into the center.
- Fold in the sides of the tortilla and roll it up tightly, tucking the ends as you go. Repeat with remaining tortillas and filling.
- Cut each wrap in half and serve immediately, or wrap in foil for a packed lunch.
Notes
Prep the chicken-yogurt filling up to 3 days in advance. Keep tortillas separate for best texture.
