- 2 medium zucchinis, washed and trimmed
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs, beaten
- Cooking spray
Instructions
- Prep the zucchini: Wash and trim the ends, then cut each zucchini into 3–4 long sticks about 1/2 inch thick.
- Make the breadcrumb mix and eggs: In a shallow bowl, mix breadcrumbs, Parmesan, garlic powder, salt, and pepper. In a separate bowl, beat the eggs until combined.
- Coat the zucchini: Dip each zucchini stick into the eggs, letting excess drip off, then press into the breadcrumb mixture to coat evenly. Place breaded sticks on a plate.
- Air fry until golden: Spray the air fryer basket with cooking spray, arrange fries in a single layer, and spray the tops lightly. Air fry at 400°F for 8–12 minutes, flipping halfway, until golden and crisp.
- Cool and serve: Remove fries to a rack or paper towel, cool for a minute, and serve warm with your favorite dip.
Notes
For best results, dry the zucchini well after cutting to help the breading stick and crisp. Don’t overcrowd the basket to ensure even browning.
