Alice Springs Chicken

A crowd-pleasing, skillet-to-oven chicken topped with bacon, mushrooms, cheese, and honey mustard for an easy, flavor-packed weeknight dinner.

Ingredients

  • 4 chicken breasts
  • 4 slices crispy bacon (cooked and chopped)
  • 1/4 cup honey mustard sauce
  • 1 cup melted cheese (cheddar or Monterey Jack)
  • 1 cup sautéed mushrooms
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper.
  3. In a skillet, cook the bacon until crispy, then remove and set aside.
  4. In the same skillet, sauté the mushrooms until tender.
  5. Spread honey mustard sauce on each chicken breast and top with sautéed mushrooms, bacon, and melted cheese.
  6. Place the chicken in a baking dish and bake for 25–30 minutes, or until the chicken is cooked through (internal temp 165°F/74°C).
  7. Serve hot and enjoy your Alice Springs Chicken!

Notes

Pound thicker chicken breasts slightly for even cooking, and consider broiling for extra browning at the end.
