Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 10-inch bundt pan thoroughly to prevent sticking.
  2. Whisk together the flour, baking soda, cinnamon, nutmeg, and allspice in a large bowl until well combined.
  3. Mix the melted butter and granulated sugar in a separate bowl until light and fluffy. Add the eggs, apple cider, and cognac, mixing until smooth.
  4. Fold the dry mixture into the wet mixture gradually using a spatula, ensuring no flour streaks remain.
  5. Gently fold in the chopped apples, hazelnuts, and raisins to the batter, ensuring they are evenly dispersed.
  6. Pour the batter into the prepared bundt pan and smooth the top. Bake for 50 to 60 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes, then invert it onto a wire rack to cool completely.
  8. Combine the confectioners sugar with a few tablespoons of apple cider in a small bowl and stir until smooth. Adjust consistency as needed.
