- 3 cups (395g) all-purpose flour
- 3/4 cup (150g, packed) light brown sugar
- 1/2 cup (100g) granulated sugar
- 1 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 1 cup (240g) apple cider
- 1/2 cup (125g) unsweetened applesauce
- 1 cup (225g) vegetable oil
- 3 large eggs
- 2 tsp vanilla extract
- 4 tbsp unsalted butter, melted
- 2 tbsp apple cider (for topping)
- 1/3 cup + 3/4 tsp (70g) granulated sugar & ground cinnamon (for sprinkling)
- 1 cup (100g) powdered sugar (for glaze)
- 3–4 tsp apple cider (for glaze mix)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- Whisk together the all-purpose flour, ground cinnamon, ground nutmeg, baking powder, baking soda, and salt in a large bowl.
- Combine the light brown sugar, granulated sugar, vegetable oil, and melted unsalted butter in another bowl.
- Add the eggs, apple cider, applesauce, and vanilla extract to the sugar mixture, whisk until combined.
- Gradually mix in the dry ingredients until just combined, being careful not to overmix.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake in the preheated oven for 45-50 minutes or until a toothpick inserted into the center comes out clean.
- Mix together the granulated sugar and ground cinnamon for the topping while the cake bakes.
- Drizzle the additional 2 tablespoons of apple cider over the warm cake once done.
- Sprinkle the cinnamon-sugar mixture over the top of the cake.
- Combine powdered sugar and apple cider in a bowl until smooth, then drizzle over the cake after cooling.
Notes
To enhance flavor, use fresh apple cider. Avoid overmixing for a light texture.
