Ingredients
Scale
- 4 Large Russet potatoes
- 5 tablespoons Unsalted butter (melted for brushing and mixing)
- 1 tablespoon Olive oil (for crispy skins; can substitute with vegetable oil)
- 6 slices Thick-cut bacon (cooked until crisp)
- 3/4 cup Sour cream (Daisy brand preferred)
- 1/3 cup Half-and-half (can substitute with heavy cream)
- 1 1/4 teaspoons Salt (adjust to taste)
- 3/4 teaspoon Black pepper (freshly ground for better flavor)
- 1/2 teaspoon Garlic powder (enhances flavor)
- 3 tablespoons Fresh chives (finely snipped for garnish)
- 2 cups Sharp cheddar cheese (freshly shredded for superior melting)
Instructions
- Preheat your grill to medium heat. Scrub the potatoes under running water to remove any dirt, and dry thoroughly.
- Brush the potatoes with melted butter and drizzle with olive oil. Make sure to cover all sides for extra crispiness.
- Place the potatoes directly on the grill grates. Close the lid and grill for about 45 minutes, turning occasionally, until fork-tender.
- While the potatoes are grilling, cook the bacon in a skillet over medium heat until crispy. Transfer to a paper towel-lined plate and crumble once cooled.
- Once the potatoes are cooked, carefully remove them from the grill. Let them cool for a few minutes until comfortable to handle.
- Slice each potato in half lengthwise and scoop out most of the flesh into a large mixing bowl, leaving enough to maintain the skins’ structure.
- Add sour cream, half-and-half, 3 tablespoons of melted butter, crumbled bacon, salt, black pepper, garlic powder, chives, and 1 cup of shredded cheddar to the potato flesh. Mix until smooth.
- Spoon the filling back into the potato skins, mounding slightly. Top each with the remaining cheddar cheese.
- Place the stuffed potatoes back on the grill. Close the lid and grill for an additional 10-15 minutes, until the cheese is melted and bubbly.
- Remove from the grill and allow to cool for 5 minutes. Sprinkle with additional chives, if desired, before serving.
Notes
Select potatoes that are similar in size for even cooking. Adjust the amount of bacon based on personal preference; you can use turkey bacon for a lighter version. For a gourmet touch, consider adding sautéed mushrooms or jalapeños to the filling.
