- 2 large eggs
- 1 cup buttermilk (or milk + 1 tablespoon vinegar)
- 1/2 cup vegetable oil (or melted butter)
- 2 teaspoons vanilla extract (or half almond extract)
- 1 cup hot water
- 1/2 cup Baileys Irish Cream (batter)
- 1/2 cup unsalted butter, softened (frosting)
- 2 cups powdered sugar (sifted)
- 1/4 cup Baileys Irish Cream (frosting)
Instructions
- Preheat the oven to 350°F (175°C) and position the oven rack in the middle.
- Prepare two 9-inch round pans by greasing and dusting with flour or lining with parchment.
- Combine the flour, sugar, and cocoa in a large bowl and whisk evenly.
- Add the baking soda, baking powder, and salt, whisk until incorporated.
- Whisk the eggs, buttermilk, oil, and vanilla in a separate bowl.
- Pour the wet ingredients into the dry ingredients, mix until mostly smooth.
- Slowly stream in the hot water while stirring gently.
- Fold in 1/2 cup Baileys Irish Cream with gentle turns.
- Divide the batter evenly between the two pans.
- Bake for 30 to 35 minutes, testing doneness at 30 min.
- Remove the cakes from oven and allow to rest for 10 minutes, then cool on a wire rack.
- Beat the butter until creamy, then gradually add the powdered sugar while mixing.
- Pour in 1/4 cup Baileys into the frosting and mix until smooth.
- Layer the first cake on a serving plate, spread frosting, then place the second layer on top and frost the sides and top.
- Chill if necessary, and serve at room temperature.
Notes
For better results, use room temperature ingredients and avoid overmixing the batter.
