- 4 Chicken thighs (Bone-in or boneless)
- 2 tablespoons Olive oil (Can substitute with vegetable oil)
- 1 Onion, chopped (Yellow or white onions work best)
- 3 cloves Garlic, minced (Fresh garlic is recommended)
- 1 cup Chicken broth (Homemade or store-bought)
- 1 tablespoon Fresh rosemary, chopped (Can use dried as well, adjust quantity)
- 1 tablespoon Fresh thyme, chopped (Dried thyme is also a good substitute)
- Salt and pepper (To taste, season generously)
- 2 tablespoons Butter (Adds richness to the gravy)
Instructions
- Preheat the oven to 375°F (190°C).
- Heat the olive oil in a large oven-safe skillet over medium heat.
- Season the chicken thighs with salt and pepper, then add them to the skillet skin-side down. Cook until golden brown, about 5-7 minutes, then flip them over.
- Remove the chicken from the skillet and set aside.
- Sauté the chopped onion and minced garlic in the same skillet until softened.
- Add the chicken broth, rosemary, and thyme. Bring to a simmer.
- Return the chicken thighs to the skillet, skin-side up, and spoon the gravy over them.
- Bake in the oven for 30-35 minutes or until the chicken is cooked through.
- Stir in the butter to thicken the gravy before serving.
Notes
For extra flavor, marinate the chicken in olive oil with herbs the night before. Let the chicken rest for a few minutes after baking to keep it juicy.
