Baked Zucchini Casserole

Ingredients

  • 4 medium Zucchini, sliced
  • 1 cup Shredded Cheese (Cheddar, mozzarella, or a blend)
  • 1 cup Breadcrumbs (Panko for extra crunch)
  • 1 Onion, chopped (yellow or white)
  • 2 cloves Garlic, minced
  • 1 Egg
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 teaspoon Italian Seasoning
  • 2 tablespoons Olive Oil (for greasing and drizzling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the sliced zucchini, chopped onion, minced garlic, cheese, breadcrumbs, egg, salt, pepper, and Italian seasoning in a large mixing bowl. Mix well until all ingredients are combined.
  3. Grease a baking dish with olive oil.
  4. Pour the zucchini mixture into the prepared baking dish and spread it evenly.
  5. Drizzle a little more olive oil on top if desired.
  6. Bake in the preheated oven for 25-30 minutes or until the top is golden brown and the zucchini is tender.
